Introducing Sensirome® Entice, a clean label, plant-based solution

By Roger Lane

The plant-based market shows no signs of slowing down and companies and brands are greening up their portfolios with plant-based meat alternatives to attract mainstream consumers who want to add more options to their diets. Unfortunately, many consumers still have a negative perception when it comes to these types of products. We discovered through our consumer research that texture/mouthfeel is the second largest concern, behind flavor, consumers have when thinking of the current plant-based proteins they consume.

Plant-based proteins can be dry and have texture issues because of the various proteins used and the problem is typically offset by adding fats. They also often have taste issues depending on the protein source, but many contain beany or bitter notes.

Combine these issues with the fact that around 83% of U.S. consumers are adding plant-based foods to their diets to improve their health, and you can see why the addition of fat could be a problem.

Sensirome® Entice is a proprietary taste technology that provides moistness, juiciness, improved mouthfeel and taste to offset the dryness and off notes that come from the use of various protein sources used in making meat alternatives. This solution is fully clean label and can be declared on pack as natural flavor with no additional ingredient callouts.

Functionality validation of Sensirome® Entice in plant-based meatballs.

Sensirome® Entice was validated through sensory testing and showed significant improvement against the control.

In studies performed by our in-house Sensory team, Sensirome® Entice produced a softer, more cohesive, juicier, and moister texture than the blank control, and also provided overall flavor enhancement by significantly increasing desirable meaty, seasoning complex, salty, and umami attributes while suppressing undesirable soy attributes.
